Fish Sauce, or Nam Pla as it is known in Thailand, is widely used as a flavouring medium. In fact it is to Thai cooking what Soy Sauce is to Chinese and Japanese. Made from fermented Anchovies its salty, fishy flavour compliments and enhancer most Thai Foods and forms the base of most Thai Sauces. Salt crystals appear naturally in high quality fish sauces.
